Deepavali Savouries

 

Ribbon Pakoda

Ingredients:

1. Rice flour - 2 cups

2. Chick pea flour - 1 cup

3. Oil - 2 Tbs

4. Chilli powder - 1 tsp

5. Salt - to taste

6. Vegetable oil - enough to deep fry

7. Water - enough to make a nice smooth dough

Method:

1.  Heat oil in a large kadai on medium high. 

2.  Mix all ingredients in a large bowl. 

3. Add water and mix the ingredients to form a nice smooth and soft ball. 

4. Fill the dough into a muruku press fitted with slit disk.

5.  Test the temperature of the oil by dropping a small amount of dough into the oil. It should sizzle and float to the surface.

6. Now squeeze the dough using the muruku press in a circular fashion into the oil. 

7. Wait for the sizzling to stop and then flip the ribbon pakoda  allowing it to cook on the other side.

8. Remove ribbon pakoda with slotted spoon and place in a bowl lined with paper towel. 

 

Oma Podi

Ingredients: 

1. Chickpea flour - 400 grams

2. Rice flour- 50grams

3. Oil - 2 Tbs

4. Chilli powder - 1 tsp

5. Salt - to taste

6. Omam - 3/4 th tsp

7. Vegetable oil - enough to deep fry

8. Water - enough to make a soft , slightly wet dough

 

 

Omam

Method:

1. Soak omam in a Tbs of water for at least 30 minutes. Grind the soaked omam in a mixie (food processor) or use mortar and pestle. Filter the ground mixture to get the omam extract. Set aside.

2.  Heat oil in a large kadai on medium high.

3.  Mix ingredients 1 to 5 in a large bowl. Add omam extract and water. Mix until a soft and slightly wet dough is formed.

4.  Fill the dough into a muruku press fitted with a disk with small holes.

5. Test the temperature of the oil by dropping a small amount of dough into the oil. It should sizzle and float to the surface.

6. Now squeeze the dough using the muruku press in a circular fashion into the oil. 

7. Wait for the sizzling to stop and then flip the oma podi allowing it to cook on the other side.

8. Remove oma podi with slotted spoon and place in a bowl lined with paper towel

Both savory snacks are quite addictive and tastes yummy!
