Though we had snow in our forecast today, there is light at the end of this winter tunnel. With us gaining light each passing day I hear more birds singing when I wake up. Remember to reset your clocks as we "spring forward" this Sunday. I am sharing this recipe that will come handy for summer barbecues.
1. Peanut coconut butter-3 Tbs
2. Olive oil -3 Tbs
3. Apple cider vinegar - 3 Tbs
4. Turmeric powder - 1/2 tsp
5. Cumin powder - 1/2 Tbs
6. Red chillie powder - 1/2 tsp
7. Salt - to taste
Combine the first 2 ingredients in a bowl and heat gently until peanut coconut butter is melted. Remove from heat.
Add remaining ingredients and whisk until well combined and smooth.
Use as needed to marinate vegetables and paneer. Grill them and enjoy!
