Buckwheat tapioca roti


Buckwheat flour- 1/2 cup

Tapioca flour - 1/2 cup

Masa flour - 1 heaped Tbs (optional) 

Salt - 1/4 tsp

Turmeric - 1/4 tsp

Chopped cilantro - 2 Tbs

Coconut oil - 1 Tbs

Water - enough to make the dough

Combine  the first 7 ingredients in a bowl. Add water little by little until the dough comes together. Knead gently until dough is smooth.

Make lime sized balls with the dough. Keep these covered with a tea towel.

Place a griddle on medium heat.

 Using a tortilla press lined with parchment paper flatten the dough into rotis.

Cook rotis on griddle.  Cook each side with 1/4 tsp oil for

1-2 minutes. 

Eat with mashed avocado or with your favourite side dish.
