Quinoa salad

 

This recipe is from a work colleague. I remember writing the recipe on a piece of paper towel after a pot luck we had at work. This is a no fail recipe and tastes delicious. I hope you enjoy this recipe as much as I have.

INGREDIENTS

1 cup quinoa, cooked and cooled.

1 cup raisins ( soak in warm water until soft).

1 can of chickpeas drained and rinsed .

 1 red pepper,chopped.

 1 zucchini, chopped.

 250 grams small tomatoes

 1 cup chopped almonds or pecans

Mix the above ingredients

DRESSING

1/4 cup plus 2 Tbs olive oil

Lemon juice - I used the juice from 5 key limes

Turmeric 1/4 tsp

Cumin powder 1 1/2 tsp

Garlic pods 2, finely chopped.

Salt and pepper to taste.

Mix the dressing into the salad and garnish with chopped cilantro and onion greens.
